Abstracto

  • This study aimed to investigate the rheological effect produced by mixing chitosan solutions with liposome vesicles derived from concentrated soybean lecithin dispersions (250 g/L), prepared by slow swelling under shear. The rheological behavior of lecithin-chitosan vesicles was determined by measurements of the parameter known as shear fatigue, as well as the variation in the area of the hysteresis cycle. The results obtained were compared with the behavior observed on the same system without chitosan; showing a significant change in their properties attributable to a thixotropic effect with a plastic behavior when the chitosan biopolymer is present. These results suggest that chitosan biopolymer promotes the transition from a system of flat sheets to closed type structures, such as vesicles. In addition, we performed a study of the influence of electrolytes such as NaCl, CaCl2 and AlCl3, with concentrations in the range of 10-5 - 10-2 mol/L, on the rheological behavior of the system.
